This homemade Italian salad dressing recipe couldn't be easier and takes just a few minutes. The great thing about making your own dressing is that you can make it the way you like it. Add more garlic, use different herbs, or adjust the ratio of vinegar to olive oil. I like a tangy Italian style dressing, so this 1:3 ratio is perfect for me.
For example, Newman’s Own Olive Oil & Vinegar Dressing contains a blend of extra-virgin and regular olive oil, but it’s also made with “vegetable oil (soybean oil and/or canola oil.” Similarly, Kraft’s Italian Olive Oil Vinaigrette contains canola oil and soybean oil in addition to extra-virgin olive oil.
Whisk lemon juice, Dijon mustard and mayonnaise in a mixing bowl. Gradually drizzle in olive oil and whisk until emulsified. Whisk in parmesan cheese. Add black pepper to taste. Note: You can also add all of the ingredients to a blender and blend until smooth. This is my preferred way to make this dressing.
